Ingredients (14)

170.00 g bacon — cubed
125.00 g ham — or gammon, cooked, cubed
30.00 ml fresh chillies — 573
2.00 potatoes — peeled, cubed
2.00 garlic — cloves, crushed
1.00 onion — halved and sliced lengthways
1.00 green pepper — sliced
1.00 red pepper — sliced
2.00 tomatoes — peeled, quartered, cored and chopped
2.00 courgettes — sliced diagonally
1.00 ml paprika
2.00 ml fresh thyme
2.00 ml fresh oregano
salt and freshly ground black pepper

Method:

Cook cubed bacon fat in a large pan until crisp and golden, then cook bacon cubes until crisp. Drain on paper towels.
Brown ham in fat, stirring. Drain on paper towels. Discard all fat.
Heat olive oil and sauté potatoes until cooked and lightly browned. Drain on paper towels.
In remaining olive oil cook garlic, onions and peppers over low heat until they soften, 10 to 12 minutes. Raise heat, add tomatoes, baby marrows, paprika and herbs and season lightly with salt and pepper.
Cook, uncovered, stirring occasionally until most of the liquid has evaporated and stew is thick. Stir in bacon, ham and potatoes, heat through and check seasoning. Serve immediately.
