Spaghetti with spinach

Ingredients (11)

1.00 onion — large, sliced into rings
1.00 garlic — cloves, crushed
2.00 celery stalks — sliced into rings
oil
250.00 g button mushrooms — sliced
600.00 g spinach — shredded
410.00 g tomato and onion mix
sugar
nutmeg — ground
salt and freshly ground black pepper
500.00 g pasta — spaghetti, cooked

Method:

Sauté the onion, garlic and celery in a little oil until soft. Add the mushrooms and stir-fry until pale brown. Add the spinach and stir-fry until soft. Add the tomato and simmer until a nice sauce is formed. Season to taste with a little sugar, a pinch of nutmeg, salt and pepper.
Serve with the spaghetti, and grated Cheddar or Parmesan cheese, if desired. Serves 6.
