Spaghetti with spinach

    large onion, sliced into rings

    clove garlic, crushed
  • 2
    stalks celery, sliced into rings

    fresh button mushrooms, sliced (optional)

    spinach (stems removed), washed and shredded

    tomato and onion mix or whole tomatoes

  • nutmeg
  • salt and pepper

    spaghetti, boiled until soft

Sauté the onion, garlic and celery in a little oil until soft. Add the mushrooms and stir-fry until pale brown. Add the spinach and stir-fry until soft. Add the tomato and simmer until a nice sauce is formed. Season to taste with a little sugar, a pinch of nutmeg, salt and pepper. Serve with the spaghetti, and grated Cheddar or Parmesan cheese, if desired. Serves 6.
