Spaghetti bolognaise

  • 1
    packet of ostrich steaks
  • 1
    green pepper, chopped
  • 2
    grated carrots
  • 1
    grated celery stalk
  • 2
    red onions, chopped
  • 1
    tomato with chilli
  • 1/2
    bottle of good red wine
  • 2
    sachets tomato paste
  • 3
    Italian herb mix
  • 2
    garlic cloves
  • 2
    bay leaves
  • 2
    Nomu Spanish rub
  • 1

Cut ostrich into quite thin and small chunks and brown in a bit of olive oil.
Add all the cut and chopped veggies,the canned tomato and paste together with the herbs and spices and the ½ bottle of red wine.
Add another cup of water as the mix in the pot has to be quite liquid.
Bring it to the boil and then cut the heat down to the very lowest and cook for at least 2 to 3 hours.
If in the course of the cooking the liquid disappears , add another bit of wine and water.
Serve with good spaghetti and freshly grated parmesan.
