Ingredients (12)

250.00 g pasta — spaghetti, uncooked
250.00 g bacon — finely chopped
2.00 onions — sliced into rings
2.00 tomatoes — peeled and diced
4.00 eggs — extra-large
500.00 ml milk
sea salt and freshly ground black pepper
2.00 ml mustard — powder
2.00 ml dried mixed herbs — pinch
30.00 ml fresh parsley — chopped
2.00 tomatoes — sliced
cheddar cheese — grated, to serve

Method:

Preheat the oven to 180ºC (350ºF). Spray a large ovenproof dish with non-stick spray or grease with margarine.
Cook the spaghetti in rapidly boiling salted water until tender. Drain well and turn into the prepared oven dish.
Fry the bacon until brown and sprinkle over the spaghetti. Sauté the onion in the pan fat until glossy. Add the tomatoes and simmer until a fairly thick sauce has formed. Pour over the spaghetti. Beat together the remaining ingredients, except the tomato slices and Cheddar cheese, and pour over the spaghetti. Arrange the tomato slices on top, sprinkle with cheese and bake for 30 minutes or until the mixture has set.
Serves 6.
