Ingredients (13)

250.00 ml milk
1.00 bread — white sliced, crusts removed
1.00 onion — finely chopped
2.00 garlic — cloves, crushed
1.00 aubergine — large, diced
oil
5.00 ml turmeric
30.00 ml chutney
2.00 bay leaves
200.00 g savoury soya mince — curry flavour
600.00 ml water — boiled
125.00 ml raisins
2.00 eggs — extra large, whisked

Method:

Sauté the onion, garlic and brinjal in a little oil until tender. Add the turmeric, chutney and bay leaves and stir-fry for a minute longer. Add the soya mince and enough of the boiling water to cook the soya until tender. Reduce the heat and simmer for about 20 minutes. Add the bread soaked in milk and the raisins and mix lightly. Turn into the prepared dish. Mix the eggs with the remaining milk. Pour over the curry mixture and bake for 10-15 minutes or until the topping has set.
Serve with rice, chutney and banana slices.
Serves 4.
