Soft boiled egg with parmesan toast soldiers

  • 2
    free-range eggs, room temperature
  • 2
    slices farm bread or ciabatta
  • A chunk parmesan grated
  • Olive oil


5 mins
Dunk the eggs in boiling water.

Remove after 4 minutes and dunk into a bowl of iced water.

Cut the bread in thick fingers, roll in olive oil, roll twice in parmesan.

Shallow fry in a bit of oil until golden a crisp. Dig in.
