Ingredients (9)

400.00 g snoek — fillets
1.00 garlic — cloves, crushed
20.00 ml onion — grated
25.00 ml fresh parsley — chopped
25.00 ml lemon juice
250.00 g smooth low fat cottage cheese
salt
freshly ground black pepper
Food colouring — red

Method:

Remove the bones and mash the fish.
Place in a food processor along with the garlic, onion, parsley, lemon juice and cottage cheese, and process.
Season to taste with salt and pepper and add a few drops of red food colouring.
Mix well and chill.
Makes about 500 ml.
