Ingredients (11)

1.00 kg snoek — salted
1.00 onion — finely chopped
10.00 ml garlic — cloves, crushed
5.00 ml fennel — seeds
5.00 ml cumin — seeds
3.00 allspice — seeds
2.00 ml peppercorns — whole
30.00 ml oil
1.00 cabbage — head, shredded
1.00 fresh chillies — deseeded and chopped
salt and freshly ground black pepper — to taste

Method:

Soak the fish in cold water for at least 5 hours or overnight, replacing the water twice. Cut fish into pieces, simmer in a little water for about 7 minutes. Drain. Sauté the onion, garlic, fennel, cumin and allspice seeds in oil until the onion is soft. Flake the fish, remove the bigger bones and add the flaked fish to the onion mixture. Simmer for 5 minutes before adding the cabbage. Simmer until the cabbage is tender but still slightly crisp. Add the chilli and season to taste with salt and black pepper. Serve with white rice.
Serves 4-6.
