Smokey chicken with kassler 'n apple

  • olive oil for frying
  • 2
    kassler steaks
  • 2
  • 3
    unpeeled garlic cloves
  • 1
    stick celery with leaves
  • 2
    dried chillies, optional
  • 15
    grainy mustard
  • 8
    chicken thighs
  • flour for dusting
  • 125
    white wine
  • 500
    weak chicken stock
  • 2
    bay leaves
  • 2
    green apples
  • salt and milled pepper
  • handful chopped fresh parsley


Heat oil in a deep pot.
Briefly fry kassler until golden.
Remove from pot and drain on absorbent paper. Set aside.
Scoop out excess oil if necessary.
In the same oil, fry onions, garlic, celery and chilli for 2-3 minutes.
Add mustard and chicken thighs, lightly dusted with flour, and fry until brown.
Add wine, stock, parsley and bay leaves and simmer gently for 45 minutes.
Then add apple and fried kassler and simmer for another 20 minutes. Season to taste, add parsley and serve with new potatoes or brown rice.
