Smoked trout croustades

  • 120
    rainbow trout fillets
  • 125
    soft cheese
  • salt and pepper
  • squeeze of lemon juice
  • 24
    mini puff pastry shells
  • red lumpfish caviar
  • fresh parsley


Process the trout, soft cheese, seasoning and lemon juice. Pack into freezer bag and freeze for up to 1 month. TO SERVE: Thaw overnight in the fridge. Spoon into 24 pastry shells about 30 minutes before serving (if filled too long before serving, the croustade shells may soften), then top each with a little red lumpfish caviar and parsley. Makes 24.
