120.00 g salmon trout fillets
125.00 g cheese — soft
salt and freshly ground black pepper
lemon — juice only
24.00 puff pastry — mini shells
caviar — red
fresh parsley

Method:

Process the trout, soft cheese, seasoning and lemon juice. Pack into freezer bag and freeze for up to 1 month.
TO SERVE: Thaw overnight in the fridge. Spoon into 24 pastry shells about 30 minutes before serving (if filled too long before serving, the croustade shells may soften), then top each with a little red lumpfish caviar and parsley.
