Smoked snoek quiche

    roll, ready-made puff pastry
  • 1
    red onion, finely chopped
  • 2
    garlic cloves, crushed
  • 2
  • 1
    seafood/fish spice
  • 500
    smoked snoek
  • 2
    grated mature cheddar cheese
  • 3
  • 250
  • 2
    fresh parsley, finely chopped
  • Salt and black pepper to taste

Preheat the oven to 180ºC
Roll out the puff pastry on a floured surface and cut to fit into the dish of your choice (remember to grease the dish before hand).
Gently press the pastry into the baking dish.
Fry the onion and garlic gently for 4-5 minutes until soft and translucent.
Add the seasonings, snoek, cheese and parsley. Spoon the mixture on top of the pastry.
Beat together the eggs, cream, salt and pepper. Pour over the filling.
Bake in the preheated oven until the filling is set but still slightly jiggly in the middle and the pastry is nice and golden.
Allow to cool down to room temperature and serve with salad.
