45.00 ml vinegar — balsamic
10.00 ml oranges — zest only
10.00 ml honey
10.00 ml fresh chillies — 573
0.00 salt and freshly ground black pepper — to taste
6.00 salad greens — baby greens
167.00 ml red onion — thinly sliced
120.00 g salmon — smoked, sliced
16.00 grapefruit — peeled,segments

Method:

1. Whisk vinegar, orange peel and honey in a large bowl to blend.
2. Gradually whisk in oil, then season with salt and pepper.
3. Add baby greens and onion and toss to coat with dressing.
4. Arrange salmon on one half of a platter and mound greens on other half.
5. Arrange grapefruit segments and avocado wedges around edges of platter.
