Smoked salmon and tzatziki mini pitas

  • 12-18 mini pitas
  • ½ cucumber, grated
  • 125
    Greek-style yoghurt
  • 1
    clove garlic, crushed
  • sprig of fresh dill, shredded
  • 200
    shaved smoked Norwegian salmon


1. Grill the mini pitas until golden.
2. Mix the cucumber, yoghurt, garlic and dill, and season to taste with salt and freshly ground black pepper.
3. Cut the salmon into 5cm ribbons. Stuff each pita with some salmon and a dollop of tzatziki. Serve at once.
