Smoked salmon and cucumber spaghetti

Ingredients (9)

250 g pasta — wholewheat spaghetti
150 g smoked salmon — strips
cucumber — julienned
6 spring onions — sliced
fresh dill — torn
lemon — zest and juice
45 ml olive oil — extra virgin
salt and freshly ground black pepper — to taste
250 ml sour cream — or smooth cottage cheese

Method:

Boil the pasta in salted water until al dente and drain.

In a large mixing bowl, gently combine the spaghetti with the remaining ingredients excluding the sour cream.

Place in serving bowls. Use a dessertspoon to place a dollop of sour cream onto each portion.

Eat warm or at room temperature.
