Smoked mackerel salad

    smoked mackerel, flaked
  • 300
    beetroot, cooked and quartered
  • 2
    avocados, sliced
  • 1
    bunch spring onions, sliced
  • 60
    rocket leaves
  • 1
    head butter lettuce, torn
  • 4
    soft-boiled eggs
  • 100
    pumpkin seeds, lightly roasted


Arrange all the ingredients in four bowls and serve with olive oil and balsamic vinegar.

Replace the butter lettuce with 300 g cooked pasta shells and make a smoked mackerel pasta salad.
Combine 100 g crumbled feta cheese with the rocket just before serving and toss with 60 ml olive oil and 30 ml balsamic vinegar.
Serve with or without the soft-boiled eggs.
