Ingredients (8)

400.00 g mackerel — smoked, flaked
300.00 g beetroot — cooked, quartered
2.00 avocado — peeled and sliced
1.00 spring onions — a bunch, sliced
60.00 g rocket — leaves
1.00 lettuce — butter
4.00 eggs — soft-boiled
100.00 g pumpkin seeds — roasted

Method:

Arrange all the ingredients in four bowls and serve with olive oil and balsamic vinegar.

Variation
Replace the butter lettuce with 300 g cooked pasta shells and make a smoked mackerel pasta salad.
Combine 100 g crumbled feta cheese with the rocket just before serving and toss with 60 ml olive oil and 30 ml balsamic vinegar.
Serve with or without the soft-boiled eggs.
