Smoked ham, pawpaw and salad tower

  • small cucumber, sliced into strips
  • small pawpaw, thinly sliced
  • a bagel or day-old bread, thinly sliced and toasted
  • 6
    slices paper-thin smoked ham
  • 125
    mixed lettuce leaves
  • 1
    chive, sliced into rings
  • 2
    black peppercorns, crushed or ground
  • 30
    olive oil
  • 1
    rasher bacon, grilled


Arrange the cucumber and pawpaw slices on a plate. Pile the bread, smoked ham, lettuce leaves and remaining pawpaw and cucumber on top in alternating layers. Sprinkle with chives and black pepper and drizzle with the olive oil. Add the finishing touches with grilled bacon. Serves 1.
