4.00 pancakes
225.00 g haddock — smoked
SAUCE
25.00 g butter
25.00 g flour — wholewheat
300.00 ml milk
30.00 ml cream
sea salt and freshly ground black pepper
5.00 ml english mustard — hot
15.00 ml grated mature cheddar

Method:

Warm the pancakes. Poach the haddock in a little water, then remove skin and flake. Keep warm. SAUCE: heat the butter in a saucepan and add the flour. add milk gradually, stirring continuously. Once it has thickened add the cream, seasoning and mustard. allow to simmer for 2 minutes. Mix half the sauce with the fish and use this mixture to fill the pancakes. Roll up and lay the pancakes side by side in a greased ovenproof dish. Pour the remaining sauce over the pancakes, sprinkle with cheese and bake in preheated oven for 15-20 minutes until cheese is golden.

Oven temperature: 200 ºC
