0.00 baby potatoes — quartered
0.00 apples — cored, sliced
0.00 lemon juice — fresh
0.00 salad greens — mixed
0.00 chicken breast fillets — sliced
0.00 cashew nuts — or pecan nuts
0.00 chives — fresh, chopped
0.00 mayonnaise — reduced fat
0.00 milk — fat free
0.00 black pepper — freshly ground

Method:

Cook the baby potatoes while preparing the rest of the salad.
In a flat dish, cover the sliced apples with the lemon juice to prevent discolouration.
In a salad bowl or platter, arrange the lettuce leaves, chicken and apple slices.
Add the baby potatoes (they can still be warm) and toss lightly.
Sprinkle the nuts and chives on top.Mix the mayonnaise and milk or yoghurt to form a thick sauce and serve with the chicken salad.
