Ingredients (11)

6.00 chicken breast fillets — smoked, chopped
12.00 baby potatoes — parboiled
12.00 cherry tomatoes
1.00 lemon — sliced
12.00 lemon leaves
1.00 pineapple — sliced into 12 pieces
1.00 green pepper — cut into 12
12.00 wooden skewers
350.00 ml couscous — to serve
Basting Sauce: cloves garlic, peeled and crushed
45.00 ml fresh chillies — 573
45.00 ml vinegar — balsamic

Method:

Oven temperature: Grill
1. Thread the chicken pieces, potatoes, cherry tomatoes,
lemon, lemon leaves, pineapple and green pepper onto
wooden skewers.

2. Basting sauce Combine all the ingredients and baste the
chicken pieces.

3. Grill the skewers for three minutes, turning once. Serve on a
bed of couscous, allowing about half a cup of raw couscous
per person.
