PASTRY
250.00 ml flour — cake, sifted
125.00 ml cheddar cheese — grated
125.00 ml butter — grated
FILLING
150.00 g beef — smoked, strips
50.00 ml parmesan cheese — grated
6.00 spring onion — chopped
125.00 g mushrooms — sliced
15.00 ml butter
4.00 eggs
200.00 ml yoghurt — plain
175.00 ml sour cream
1.00 ml salt
freshly ground black pepper — to taste
5.00 ml mustard — powder
garnish — garnish
fresh chives

Method:

Mix pastry ingredients to a stiff dough in a food processor. Press onto base and sides of a 23 cm diameter quiche dish, or six 10 cm dishes. Scatter meat on base of pastry shell and sprinkle with Parmesan cheese. Fry onions and mushrooms in heated butter for two minutes and spoon on top of Parmesan cheese. Beat together the remaining filling ingredients well and pour into pastry shell. Bake at 180 ºC for 35 to
40 minutes or until egg custard has set. Garnish with blanched chives or lemon rind and serve with a Greek salad. End the meal with fresh fruit rather than a rich pudding.
