SALAD INGREDIENTS
8.00 butter lettuce — leaves, red lettuce
250.00 g angelfish — smoked, flaked
100.00 g button mushrooms — sliced
410.00 g litchis — tinned
5.00 celery stalks — sliced
radishes
sunflower seeds — toasted
SALAD DRESSING
100.00 ml Buttermilk — or natural yoghurt
100.00 ml sour cream
25.00 ml mayonnaise
mustard powder — pinch
50.00 ml litchis — reserve juice
black pepper — freshly ground

Method:

Arrange the lettuce leaves on a pretty platter. Arrange the angelfish, mushrooms, litchis, celery and radishes on top and sprinkle with sunflower seeds. Combine all ingredients for the salad dressing. Chill and pour over the salad just before serving or serve separately in a sauceboat.
Serves 8-10.
