Slow- cooked fillet

    Aged Fillet
  • 90
    Extra -Virgin Olive Oil
  • 2
    Dijon Mustard



1 Mix the marinade ingredients until well combined.

2 Turn the fillet in the marinade and leave to marinate in the fridge for about an hour.

3 Preheat the oven to 100 degrees C.

4 Heat 1 tbsp olive oil in a large frying pan over a high heat until it's very hot and cook one of the fillets, turning, until browned all over. Repeat with the next fillet, adding more olive oil if needed.

5 Place the fillets (best-looking side facing up) on a baking tray and roast for about 1 hour and 20 minutes.

6 Remove from the oven, cover with foil and leave to rest for at least 30 minutes
