Slightly chilli tomato sauce

Ingredients

  • ½ onion, very finely diced
  • 2 celery sticks, diced
  • 3 carrots, peeled and grated
  • 2 garlic cloves, crushed
  • ½ tsp dried chilli flakes or 2 chillies finely chopped (optional)
  • 2-3 Tbsp red or white wine
  • 15

    red wine or balsamic vinegar
  • 125
    ml
    vegetable stock
  • 2x 410g cans peeled and chopped tomatoes
  • 15
    ml
    tomato purée
  • 15
    ml
    Worcestershire sauce
  • salt and milled black pepper
  • 5

    sugar
  • 45
    ml
    roughly chopped soft herbs (Italian parsley, basil, oregano)
 

Method

Place all ingredients except herbs in a big pot and bring to the boil. Reduce heat, cover and simmer for 30 minutes until vege­tables are soft. Remove lid and simmer for a further 20?30 minutes, until reduced and slightly thickened. Season to taste and stir in herbs.
