Skate wings with citrus butter

Ingredients (9)

800.00 g skate wing
45.00 ml butter
15.00 ml sunflower oil
1.00 lemon juice
2.00 oranges — juice only
salt and freshly ground black pepper
30.00 ml fresh parsley — chopped
1.00 lemon — peel only, cut into strips
1.00 orange — zest only

Method:

Wipe skate wings with a damp cloth. Heat butter and oil in a large frying pan and sauté skate for about 4 minutes on each side.
Add juices, seasoning and parsley. Reduce heat, cover and cook for a further 5 minutes or until done.
Place fish on heated plates, pour over butter and top with sliced citrus peel.
TOTAL KILOJOULE COUNT: 4 850 kJ (1 160 Cal). A portion: 1 215 kJ (290 Cal).
