Skate wings with citrus butter

    skate wings

    sunflower oil
  • 1
    lemon, juice
  • 2
    oranges, juice
  • salt and milled black pepper
  • 30
    chopped parsley
  • 1
    lemon, thinly sliced peel
  • 1
    orange, thinly sliced peel


Wipe skate wings with a damp cloth. Heat butter and oil in a large frying pan and sauté skate for about 4 minutes on each side. Add juices, seasoning and parsley. Reduce heat, cover and cook for a further 5 minutes or until done. Place fish on heated plates, pour over butter and top with sliced citrus peel. TOTAL KILOJOULE COUNT: 4 850 kJ (1 160 Cal). A portion: 1 215 kJ (290 Cal).
