Ingredients (12)

500.00 g pasta of your choice — fresh, dried
30.00 ml fresh chillies — 573
1.00 onion
3.00 garlic — large cloves
1.00 pepper — red or yellow
4.00 baby marrows
5.00 ml stock powder — vegetable or chicken
30.00 ml wine — white
0.00 sugar — pinch
0.00 salt and freshly ground black pepper
1.00 spinach
1.00 fresh basil — parsley or oregano

Method:

Cook pasta in lots of salted boiling water, with a little added oil, according to packet instructions.
Meanwhile heat olive oil in a large pan.
Add onion and garlic and sautT for a minute or two.
Add pepper strips and stir-fry until just beginning to soften – about two minutes.
Add baby marrows, stock, wine, sugar and seasoning.
Cook over medium heat for five minutes.
Add spinach and herbs, adjust seasoning and cook until done.
Toss mixture into warm pasta, drizzle with a little extra olive oil and serve with a wedge of Parmesan for grating.
