Ingredients (9)

4.00 chicken — quarters
4.00 garlic — cloves, unpeeled
2.00 onion — quartered
4.00 potatoes — unpeeled and cut into wedges
1.00 lemon — halved
0.00 ml fresh chillies — 573
salt and freshly ground black pepper
1.00 basil — italian parsley, roughly chopped
250.00 ml wine — white or chicken stock

Method:

Place the chicken, garlic, onions and potatoes in a large roasting pan. Squeeze over lemon juice and toss in the lemon halves afterwards. Drizzle with olive oil and season well. Roast in a preheated 200 ºC oven for 30 minutes.
Scatter fresh herbs over the top, add wine and roast for a further 10 to 15 minutes. Serve chicken with couscous or wilted spinach, and lots of pan juices.
