Ingredients (16)

6.00 tomatoes — finely chopped
1.00 cucumber — English, finely chopped
1.00 onion — small, chopped
1.00 green pepper — large, finely chopped
2.00 bread — white, sliced and crumbled
30.00 ml fresh chillies — 573
30.00 ml vinegar — wine
375.00 ml stock — chicken
125.00 ml tomato juice
2.00 ml sugar
salt and freshly ground black pepper — to taste
Tabasco sauce
AVOCADO CREAM
1.00 avocado — large
65.00 ml fromage frais — or cream cheese
lemon juice — to taste
salt and freshly ground black pepper

Method:

Mix all soup ingredients together and chill. Adjust seasoning where necessary.
AVOCADO CREAM: Cut avocado and scrape out pulp, making sure that you use flesh nearest skin which adds a lovely green colour. Place avocado and remaining ingredients in a food processor and blend to a thick cream. (This can just as easily be done by hand.) Serve chilled soup with a dollop of avocado cream
