Simple crispy fish

  • 4
    thick fresh fish fillets, 170 g each
  • 45
    sun-dried tomato pesto
  • 75
    fresh white breadcrumbs
  • 40
    blanched almonds or pine nuts, roughly chopped
  • 30
    freshly grated Parmesan cheese
  • 30
    olive oil
  • 2
    cloves garlic, crushed


Spread one side of each fillet with pesto and place on a greased baking tray.
Mix together the breadcrumbs, nuts, Parmesan cheese, olive oil and garlic.
Spoon onto the fish and press down lightly.
Bake in a preheated 180 °C oven for about 15 minutes or until the top is browned and the fish flakes easily when tested with a fork.
Serve with a salad and potatoes.
