Simple cooked salad

    ripe tomatoes, quartered

    onions, chopped
  • 0.50
    cucumber, halved lengthways, seeded and sliced
  • 1
    green pepper, halved, seeded and chopped
  • 2.50
    lemon juice
  • 45
    olive oil
  • 2
    cloves garlic, crushed
  • 30
    fresh coriander, chopped
  • sprigs of coriander to garnish


Place the tomatoes, onions, cucumber and green pepper in a saucepan.
Add 60 ml water and simmer for five minutes. Leave to cool.
To make the dressing, mix together the lemon juice, olive oil and garlic.
Drain the vegetables and transfer them to a bowl.
Pour over the dressing, season to taste with salt and freshly ground black pepper and stir in the chopped coriander.
Garnish with sprigs of fresh coriander and serve immediately.
