Ingredients (7)

1.00 kg butternut
80.00 ml fresh chillies — 573
3.00 garlic — cloves, finely sliced
125.00 ml fresh mint — finely chopped
125.00 ml vinegar — white wine
125.00 ml sugar
cinnamon — ground

Method:

Fry the butternut, sliced into 5 to 7 mm thick slices, on both sides in the heated olive oil until cooked and lightly browned. Remove from the pan and arrange on a pretty serving platter.
Sprinkle with the garlic and mint.
Drain the oil and add the vinegar, sugar and cinnamon. Stir until the sugar has dissolved and simmer for 5 minutes or until a thin syrup is formed.
Pour over the butternut slices and serve.
