Sicilian butternut salad

    kg
    butternut
  • 80
    ml
    olive oil
  • 3
    cloves garlic, very finly sliced
  • 125
    ml
    fresh mint, finely chopped
  • 125
    ml
    white wine vinegar
  • 125
    ml
    sugar
  • a pinch of cinnamon
 

Method

 
Fry the butternut, sliced into 5 to 7 mm thick slices, on both sides in the heated olive oil until cooked and lightly browned. Remove from the pan and arrange on a pretty serving platter. Sprinkle with the garlic and mint. Drain the oil and add the vinegar, sugar and cinnamon. Stir until the sugar has dissolved and simmer for 5 minutes or until a thin syrup is formed. Pour over the butternut slices and serve.
