SCONE DOUGH
170.00 g flour — cake
7.00 ml Baking powder
salt
25.00 ml butter — cut into pieces
125.00 ml milk
TOPPING
5.00 ml oil
2.00 garlic — cloves, crushed
410.00 g tomatoes — whole
1.00 stock cube — chicken
12.00 ml chilli sauce
200.00 g shrimps
140.00 g cheese — processed, garlic-flavoured
100.00 g cheddar cheese — grated

Method:

Preheat oven to 180 ºC (350 ºF). Sift the dry ingredients together and rub in the butter with your fingers. Add sufficient milk to form a manageable dough, cutting it in with a spatula until just mixed. Roll out the dough on a lightly floured surface until it is 5 mm thick. Line a 34 x 23 cm pan with the dough pressing it slightly up the sides of the pan. Chill. Heat the oil in a pan and fry the garlic until soft. Chop the tomatoes coarsely and add to the garlic with the crumbled stock cube. Simmer until most of the liquid has evaporated. Add the chilli sauce and chill. Spread the prepared tomato sauce over the scone dough base and bake for about 10 minutes until the dough is nearly done. Arrange the shrimps and pieces of processed cheese on top. Sprinkle with the Cheddar cheese and origanum. Return to the oven and bake until the cheese has melted – not longer than 5 minutes or the shrimps will be tough. Serves 4.
