Shortbread for Sunday

    cake flour
  • 250
    butter, at room temperature
  • 125
    castor sugar, plus a little extra

Preheat the oven to 200 ºC (400 ºF) and butter a 21 cm square cake tin or spray with nonstick spray. Sift the cornflour and cake flour together twice. Beat the butter for about 2 minutes until light and fluffy. Gradually add the castor sugar, beating continuously. Add the flour mixture and mix lightly to form a soft dough. Press the dough into the prepared tin and cut into 2 cm squares. Sprinkle extra castor sugar on top and bake for 10 minutes. Reduce the oven temperature to 160 ºC (325 ºF) and bake for about 30 minutes until a light straw colour. Sprinkle with extra castor sugar, allow to cool and cut into squares. Store in an airtight container. Makes 36 squares.
