750.00 g pickling onions
30.00 ml butter
60.00 ml sherry
30.00 ml brown sugar
2.00 fresh thyme — sprigs
1.00 bay leaves

Method:

To remove the onion skins, cut off both ends of the onions and cover them with boiling water.
Stand for 1 to 2 minutes.
Drain, rinse under cold running water and remove the skins.
Heat the butter and sauté the onions until golden brown.
Add the sherry, sprinkle with the brown sugar and add the herbs.
Cover with water and bring to the boil.
Reduce the heat and simmer until a flavoursome sauce forms and the onions are tender.
