Sheriff Lobo's apricot chicken

    sunflower oil

    chicken breasts, deboned and sliced

    onions, sliced
  • 1
    green pepper, chopped

    red pepper, chopped
  • 3
    green chillies, sliced

    fresh button mushrooms, sliced

    packet brown onion soup
  • 500
    fresh apricot juice
  • 410
    apricot halves


45 minutes
1. Heat butter and oil together in a large saucepan. Brown the chicken, then add onion, green and red pepper and chillies. Cook for about 3 minutes, then add mushrooms. 2. Mix the brown onion soup and apricot juice together and add to the chicken mixture. Bring to the boil, then reduce heat, stir in the apricot halves and simmer for 35 minutes until chicken is tender.
