Sesame potato bread

    medium potatoes
  • 750
    cake flour

    sesame seeds, toasted

    instant dry yeast

    each sesame seeds and poppy seeds for topping


Preheat oven to 180 ºC. Grease and line a 14 cm x 21 cm loaf pan. Peel potatoes and cut into 1 cm cubes. Boil, steam or microwave potatoes until tender, drain and cool. Sift flour into large bowl. Add potatoes, sesame seeds, yeast, sugar, salt and chives. Stir in milk and oil and mix to a soft dough. Knead dough on floured surface for about 10 minutes, or until dough is smooth and elastic. Place dough in oiled bowl and cover, stand in warm place for about one hour, or until dough has doubled in size. Turn dough onto floured surface and knead until smooth. Place dough in prepared pan and stand in warm place for about 30 minutes or until dough has almost doubled in size. Brush loaf with egg, sprinkle with extra sesame seeds and poppy seeds and bake for about 40 minutes, or until loaf sounds hollow when tapped.
