Sesame-flavoured egg-fried rice with prawns

Ingredients (7)

10.00 ml sesame oil
2.00 eggs
10.00 ml peanut oil
1.00 spring onions — sliced diagonally
6.00 prawns — queen
750.00 ml rice — jasmine or basmati
0.00 salt and freshly ground black pepper

Method:

Combine sesame oil with eggs and beat lightly.
Heat a wok or heavy-based frying pan until hot.
Add peanut oil and stir-fry spring onions for two minutes.
Add eggs and stir-fry for one minute.
Add prawns and cook a further minute.
Add rice and stir-fry for five minutes, stirring continuously. Season and serve hot with soya sauce on the side.
