Sesame-crusted chicken with butter bean salad

  • 4
    chicken breasts
  • 30
    black or white sesame seeds
  • salt and freshly ground black pepper
  • 15
    sunflower oil
  • 1
    red onion, peeled and sliced
  • 1
    x 410 g tin butter beans, drained
  • 2
    limes, the juice
  • 15
    sesame oil
  • 5
    fish sauce
  • 30
    soya sauce
  • 2
    limes, segmented
  • watercress and basil leaves, to serve

Toss the chicken breasts in sesame seeds and season.
Heat a non-stick pan and add the oil.
Over a medium heat, cook the breasts until golden brown and cooked through, taking care not to overcook; the breast should be a touch pink inside as it will finish cooking through once taken from the heat.
Mix all the salad ingredients and divide between four bowls.
Slice the chicken and place on top of each serving.
