Sesame Camembert bites with sweet chilli dipping sauce

    Camembert cheese

    sesame seeds

    large egg

    fresh red chilli

    lemon juice

    freshly chopped basil

Place cheese in the freezer for one hour.
Mix together sesame seeds and breadcrumbs. Cut cheese into triangular wedges. Dip each wedge into the egg, then into sesame-seed mixture to coat. Refrigerate for 30 minutes.
Preheat the oil. The temperature is right when a cube of bread takes one minute to turn golden.
Fry cheese wedges in the oil until golden. Drain on absorbent paper and serve immediately with sweet chilli sauce.
Sweet chilli sauce Place sugar and 125ml water in a saucepan.
Bring to the boil and allow to boil gently for five minutes.
Add chilli and continue to simmer for five minutes.
Set aside to cool, then stir in the lemon juice and basil.
