750.00 g margarine
800.00 g white sugar
15.00 ml salt
2.00 kg flour — self-raising
250.00 ml coconut
500.00 g semolina
320.00 g bran
35.00 ml Baking powder
1.00 Buttermilk
5.00 eggs — extra-large

Method:

Preheat the oven to 180 ºC and butter two oven pans or spray with non-stick spray. Melt the margarine and sugar together. Mix the salt, self-raising flour, coconut, semolina, bran and baking powder together. Add the margarine mixture and mix well. Beat the buttermilk and eggs together and add, stirring until well blended. Turn the batter into the prepared pans, spreading evenly. Bake for 30 minutes, then reduce the oven temperature to 160 ºC and bake for another 20 minutes or until done and a testing skewer comes out clean. Cool slightly in the pans before turning out onto wire racks. Cut into pieces when completely cold and dry at 100 ºC. Store in an airtight container.
Makes 120 rusks.
