Seared fillet with deep-fried julienne vegetables

  • 600
    whole beef fillet
  • oil for frying
  • 250
    each julienne vegetables such as potatoes, leeks and carrots
  • 1
    packet instant savoury gravy


Sear fillet in a heated, heavy-based pan for 10 minutes on each side, or until evenly browned but still pink inside. Rest in a warm place. Meanwhile, deep-fry vegetables in batches for no more than 30 seconds a batch. Drain on kitchen paper and keep warm. Slice fillet and place slices on mounds of julienne vegetables. Prepare gravy according to packet instructions, pour over meat and serve.
