Scotch eggs

  • 4
    hard-boiled eggs, shelled
  • 30
    cake flour
  • 350
    pork sausages
  • 1
    egg, whisked
  • 20
    dried breadcrumbs
  • 50
    oil for deep-frying


Lightly roll the boiled eggs in flour.

Remove the meat from the sausage casings and divide into four equal portions.

Cover each boiled egg as evenly as possible with a portion of meat.

Dip each Scotch egg in whisked egg, then into the breadcrumbs.

Heat the oil in a small saucepan and deep-fry the eggs for about 10 minutes or until the meat is done. Cool and chill.
