  • 500
    cake flour
  • 2

    baking powder
  • 60
    butter or margarine
  • 180
    milk or sour milk
  • 1
    beaten egg, or milk to glaze


1. Grease a baking sheet or sprinkle with flour. Pre-heat oven to 220°C.
2. Sift flour, salt and baking powder together into a bowl.
3. Cut butter into small pieces, add to flour mixture and rub in until mixture resembles fine breadcrumbs.
4. Add milk and blend to a very soft dough. Turn dough out onto a floured board and toss with floured hands to smooth.
5. Gently flatten dough with hands, or roll out to 20-25mm thickness. Cut into rounds, using well-floured, plain or fluted cutters.
6. Place on a baking sheet. Brush tops with beaten egg or milk. Bake for 10-20 minutes, or until well-risen, golden brown and just firm. Cool on a wire rack.
