Ingredients (6)

500.00 ml flour — cake
2.00 ml salt
20.00 ml Baking powder
60.00 ml butter — or margerine
180.00 ml milk — or sour milk
1.00 eggs — beaten

Method:

1. Grease a baking sheet or sprinkle with flour. Pre-heat
oven to 220°C.
2. Sift flour, salt and baking powder together into a bowl.
3. Cut butter into small pieces, add to flour mixture and
rub in until mixture resembles fine breadcrumbs.
4. Add milk and blend to a very soft dough. Turn dough
out onto a floured board and toss with floured hands
to smooth.
5. Gently flatten dough with hands, or roll out to 20-25mm
thickness. Cut into rounds, using well-floured, plain or
fluted cutters.
6. Place on a baking sheet. Brush tops with beaten egg
or milk. Bake for 10-20 minutes, or until well-risen, golden
brown and just firm. Cool on a wire rack.
