Ingredients (9)

24.00 scallops — in shells
125.00 ml butter
6.00 spring onions — to garnish
DRESSING
24.00 pieces ginger — pickled
60.00 ml soy sauce
45.00 fish sauce
45.00 ml lime juice
5.00 ml sugar
2.00 garlic — cloves, crushed

Method:

DRESSING: Mix all ingredients and refrigerate until required.
Remove scallops from shells. Fry scallops in butter for 1 minute on each side. Remove from pan. Cool.
Return scallops to shells.
Spoon dressing over, garnish with spring onion curls and serve.
