Ingredients (11)

2.00 onion — finely chopped
2.00 garlic — cloves, crushed
oil
1.00 kg pumpkin — peeled, diced
10.00 ml fresh sage — chopped
10.00 ml tomato purée
15.00 ml brown sugar
125.00 ml stock — chicken
sea salt and freshly ground black pepper
25.00 ml butter
250.00 ml cheese — grated

Method:

Fry the onions and garlic in a little oil until tender and add the pumpkin, sage, tomato purée, brown sugar and stock. Reduce the heat, cover and simmer until tender.
Drain off as much of the liquid as possible and mash the pumpkin lightly. Season with salt, pepper and butter and stir in the grated cheese.
Serve hot as a delicious side dish.
Serves 4-6.
