Savoury mini-bakes

  • 400
    vegetable and herb curried mince or any leftover shredded meat or mince
  • 4
    extra-large eggs
  • salt and freshly ground black pepper
  • 80
    Cheddar cheese, grated
  • finely chopped parsley for garnishing

Preheat the oven to 200 ºC. Spray four small ramekins with non-stick spray or grease well. Divide the curried mince or leftover meat between the four ramekins (do not overfill). Break an egg on top and season with salt and black pepper if de sired. Sprinkle with grated cheese. Sprinkle a little parsley on top and bake for 10-15 minutes or until the eggs have set and are done. Serves 4 as a light meal.
