Savoury cookies

  • 100
    bacon, finely chopped

    plain flour

    cheese, grated
  • salt and pepper to taste

    mixed herbs
  • 5
    drops Tabasco sauce

    butter, softened

    cream (or more as needed)
  • 1
    egg yolk


1. Fry bacon until crisp, set aside and leave to cool. 2. Stir together flour, cheese, salt, pepper, herbs, Tabasco sauce and bacon. Add butter and rub in with fingertips until well blended. Mix in egg and cream until the dough holds together. Shape into a 4 cm diameter roll. Wrap in clingfilm and refrigerate for 30 minutes. 3. Cut into 7 cm slices. Place on a lightly greased baking sheet. Brush with egg yolk and bake in a preheated oven at 200 ºC for 20 minutes, or until golden brown.
