Ingredients (10)

100.00 g bacon — finely chopped
420.00 ml flour — plain
50.00 g cheese — grated
salt and freshly ground black pepper — to taste
5.00 ml mixed herbs
5.00 Tabasco sauce — drops
100.00 g butter — softened
1.00 eggs
45.00 ml cream
1.00 eggs — yolk only

Method:

1. Fry bacon until crisp, set aside and leave to cool.
2. Stir together flour, cheese, salt, pepper, herbs, Tabasco sauce and bacon. Add butter and rub in with fingertips until well blended. Mix in egg and cream until the dough holds together. Shape into a 4 cm diameter roll. Wrap in clingfilm and refrigerate for 30 minutes.
3. Cut into 7 cm slices. Place on a lightly greased baking sheet. Brush with egg yolk and bake in a preheated oven at 200 ºC for 20 minutes, or until golden brown.
