Savoury bread (and no-butter) pudding

Ingredients (10)

2 cup low fat milk
2 eggs — beaten
1 salt and freshly ground black pepper
1 bread — baguette, sliced
1 spring onions — chopped
200 g chicken — or ham, smoked
1 spinach — baby leaves, blanched, chopped
1 asparagus — chopped
2 Tbs fresh parsley
125 ml parmesan cheese — grated

Method:

Preheat oven to 180°C

Beat milk and eggs together, season and set aside

Toss remaining ingredients together in a large ovenproof dish and scatter over half the parmesan

Pour over egg mixture, top with remaining parmesan and bake for 20-25 minutes or until egg has set

Serve with a green salad
