Sausage rolls with fresh tomato salsa

  • 4
    ripe tomatoes, chopped
  • 10
    fresh basil leaves

    small onion, chopped
  • 1
    clove garlic, crushed
  • 15
    olive oil
  • 30
    tomato sauce
  • salt and freshly ground black pepper
  • 2
    French loaves
  • 8
    spicy sausages, cooked
  • few lettuce leaves


Place the tomatoes, basil, onion, garlic and oil in a food processor and process until smooth. Stir in the tomato sauce and season to taste with salt and pepper. Quarter the French loaves and cut each quarter in half but not all the way through (or use eight long bread rolls, halved lengthways, but not cut all the way through). Spoon a little of the salsa onto the bread and arrange the sausages on top. Finish with lettuce leaves.
