Sausage casserole

  • 8
    pork sausages
  • 5
    medium potatoes, peeled and thinly sliced
  • 1
    large onion, thinly sliced
  • courgettes or baby carrots sliced lengthwise
  • 70
    tomato paste
  • 1
    beef stock cube
  • dash Worcestershire sauce
  • 15
    fresh parsley, finely chopped
  • generous sprinkle celery salt
  • salt and black pepper


Place the sausages, each cut into 4 pieces, in the bottom of a casserole dish. Arrange potatoes, onions and courgettes in alternate layers on top of the sausages. Mix tomato paste and beef stock cube in 250 ml water, add the Worcestershire sauce, parsley and seasoning and pour over the casserole. Cook in a medium oven at 180 ºC for 1 hour, or until potatoes are tender.
