Sausage and green lentil cassoulet

  • 500
    green or brown lentils
  • water to cover
  • 2
    beef stock cubes
  • butter and sunflower oil for frying
  • 1
    large onion, chopped
  • 2
    cloves garlic, crushed (optional)

    spicy smoked sausages, thickly sliced
  • 15
    wholegrain mustard
  • 5
    mustard powder

    white wine

    sprig fresh rosemary
  • salt and milled black pepper


Place lentils in water with crumbled stock cubes and bring to boil. Reduce heat and simmer for 15 to 20 minutes. Meanwhile, heat butter and oil. Sauté onion and garlic until glossy. Add sausages and sauté for 1 minute. Add mustards and remaining ingredients and toss to coat. When lentils are just cooked, spoon lentil mixture, with juice, into pan. Simmer for 5 to 10 minutes, or until heated through. Serve with crusty bread and vegetables. TOTAL KILOJOULE COUNT: 10 500 kJ (2 510 Cal). A portion: 2 625 kJ (625 Cal).
